Quinoa recipe with vegetables and egg

We will now choose a plate hot and very nutritious which is perfect to maintain our line as well as vegetarian people (vegan not because we will use egg). To prepare this recipe with quinoa For 4 people we will need:

  • 250 grams of quinoa
  • 4 eggs
  • 300 grams of shitake mushrooms
  • 2 cloves of garlic
  • 1 leek
  • 150 grams of pumpkin
  • 1 red pepper
  • 10 chopped nuts
  • Extra virgin olive oil
  • Salt
  • Chopped parsley

Obviously, the first step is to prepare the quinoa as we have explained in step 1. When you have it ready, we will start preparing the rest of the food to configure our dish.

We clean the leek, the pumpkin and the pepper and we cut them in dice so that they integrate perfectly with the other ingredients. Then, sauté them in a pan or a wok with a little oil and add a little salt.
